For some reason this doesn't work for me, I tried other IPAs and iTunes copies them over fine, but this starts copying, and then goes back to saying "Sync complete" without actually copying. I'm on an iPhone 3G on 4.2.1

You need to install AppSync from cydia.akemi.ai
